I always have a pair or two of these kicking around.

Excellent for trimming your mats and for folding wool accordion style and cutting it into strips. They are very sharp, and comfortable to hold, and a great price. 

Tip: Get two pairs one for cutting wool and one for cutting burlap or linen because when you use your scissors to cut burlap or linen it fills them for cutting wool. I always keep one pair just for cutting wool.
